Introduction

a great recipe for a traditional pita bread.

Ingredients

Serves: 4-6

For the First Part

  • 1 ounce fresh yeast
  • ¼ cup warm water
  • 2 teaspoons sugar

For the Second Part

  • 8 cups white flour
  • 1 pinch of salt
  • 3 cups warm water

Method

  • Preheat oven to 180 C.
  • mix together all ingredients of part 1 until nice and smooth, and yeast has mixed in. Cover mixture with plastic wrap and leave to rise in warm place until mixture has fully risen and yeast is bubbling.
  • Put flour and salt in deep bowl and mix together. pour on risen yeast and start mixing slowly.
  • mix in 3 cups of water and mixture is smooth.
  • Divide mixture into 15 round 2cm thick pieces. cover with plastic wrap and leave warm place to rise for 20 minutes.
  • Bake in oven for 25 minutes on 180 C.
