Ingredients

Serves: make as little or much as need

Metric Cups
  • corn tortillas
  • salsa (roasted 3 pepper)
  • black beans (smokey smashed)
  • guacamole
  • sour cream (optional)
  • baby spinach (fresh, or any salad greens)
  • Cheddar cheese (sharp, grated)

Method

  • In a large skillet, heat oil.
  • Once hot add 1 corn tortilla and fry for approx 1 minute then turn and fry other side until crispy.
  • Drain each tortilla on paper towel.
  • Once tortillas are ready spread guacamole as first layer, then add black beans. Next the 3 pepper salsa, cheese and lettuce. And of course, sour cream if you are a fan.

    You may want to have plenty of napkins around because this is messy. But, sooo good. I often serve with diced roasted sweet potatoes tossed in cumin or roasted lima beans.
