Ingredients

Serves: About 8

Metric Cups
  • 1 kilogram tomatoes (fresh and skinned, seeded and chopped)
  • 2 large tinned tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 4 anchovy fillets (salted)
  • 1 olive oil (a good glut)
  • 1 sprinkling of dried oregano
  • 2⅕ pounds tomatoes (fresh and skinned, seeded and chopped)
  • 2 large tinned tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 4 anchovy fillets (salted)
  • 1 olive oil (a good glut)
  • 1 sprinkling of dried oregano

  • Chop onion and garlic and cook till softened not browned in olive oil
  • Now thow in the anchovies and cook for a further 5 mins they should disolve
  • Add the rest of the ingredients and cook on a low simmer for about 45 mins taste, season with salt and black pepper
