Cut the bread into thick slices run under the tap and squeeze all the water out, place in food processor with the walnuts and garlic and blitz. Now add the juice of a lemon and season blitz again add about 1 tbls white wine vinegar turn the machine on and drizzle olive oil in till you get the required texture, it should be like thick dip throw a hand full of parsley in and blitz once. Leave overnight before serving.
