Tex-Mex Breakfast Stack

In a heavy bottom skillet, or in the microwave, cook the bacon to your preferred level of doneness. I like mine just on the cusp of crisp. Drain the fat and wipe out the pan, if you cooked the bacon in it, and spray with cooking spray. Lay in your first tortilla, top with the shredded cheese, and top with the remaining tortilla. Cook for one minute, or until lightly brown, then flip and cook until the other side is lightly browned and the cheese is melted. Place on your plate and top with the cooked bacon. Return the skillet to the heat. Spray again with cooking spray and fry the eggs until they reach your preferred level of doneness. I like my whites completely set and the yolks runny and warm. Place the eggs on top of the bacon topped tortillas and top it all off with the salsa. Enjoy!
Introduction
This breakfast was a happy accident. I was looking for something to make for breakfast, but I was out of bread for toast so I decided that cheese quesadillas in corn tortillas topped with eggs and bacon, and smothered in salsa, might be tasty. I was so right!

- 3 slices thick cut bacon
- 2 corn tortillas
- ¼ cup grated Cheddar cheese
- 2 eggs
- ¼ cup salsa (chunky is best)
- cooking spray (non-stick)
