Onion Chutney

Introduction

This onion chutney is great served with cheese on toast or with a ploughmans.... cold cuts..... gammon - you can even use it as a glaze on gammon.

Ingredients

Serves: 4

  • 7 onions (or more if you fancy)
  • brown sugar
  • balsamic vinegar

Method

Onion Chutney is a community recipe submitted by thewench and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Slice the onions and put in a frying pan with a very small amount of oil (to stop them sticking). When they are soft, and a little brown, sprinkle a bit of brown sugar over the top of them.
  • Stir well and add a good dollop of balsamic vinegar (the amounts depend on how sweet / piquant you want your onions to end up.)
  • When the sugar has all melted, and the mix has started to thicken, put into a sterilised jar. I'm not sure how long it'll keep, but I tend to stuff it in the fridge and use it quite quickly. Maybe a month or so?
  • Variation: Add some thyme to the whole lot. Or coriander or any other bits that you fancy........
