Sheri's Sherry Trifle

Introduction

My mother (Sheri) has made this on special occasions, (including feast days) ever since I can remember first cooking with her. It is her speciality dessert, appropriately named! My whole family are huge fans of this trifle and it's usually polished off before any other dessert. A real crowd-pleaser! I love it just because it seems to 'belong' to my mum!

Ingredients

Serves: 6

Metric Cups
  • 200 grams sponge finger
  • strawberry jam (a jar)
  • 1 tin peaches (sliced)
  • ½ litre sherry (medium or dry)
  • 2 packets custard powder
  • ¼ litre whipping cream (or double cream)
  • almonds (toasted - to decorate)
  • ratafia biscuits (to decorate)
  • 7 ounces lady finger
  • strawberry jam (a jar)
  • 1 tin peaches (sliced)
  • ⅚ pint sherry (medium or dry)
  • 2 packets custard powder
  • ⅖ pint heavy cream (or double cream)
  • almonds (toasted - to decorate)
  • ratafia biscuits (to decorate)

Method

Sheri's Sherry Trifle is a community recipe submitted by tootsievalentine and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Sandwich together the sponge fingers with the strawberry jam by placing in the base of a glass bowl.
  • Chop the peaches and place over the sponge fingers, keeping 6 slices back for decoration.
  • Pour over the sherry to soak into the sponge fingers
  • Make up the instant custard with less water - it has to be thick! Allow to cool, then spoon over the peaches and sponge fingers
  • Whip the cream and spoon over the custard.
  • Decorate with peach slices, toasted almonds and ratafia biscuits. YUM!
