Onion and Parmesan Biscuits

In a small fry pan, heat oil and stir onions. Cook on medium-high heat, stirring for about 3 minutes, then scrape onto a plate to cool. Preheat oven 200°c and lightly oil a medium or large baking sheet. In a large mixing bowl, stir together the flour, cornmeal, baking powder, salt & pepper and basil. Cut butter into small pieces and drop into dry mix. Cut into the dry mix until you have little pellets. Stir in parmesan. Make a well in dry and stir in milk to make a dense but still soft mass. Scrape onto a lightly floured surface and knead with floured hands 8-10 times. Flour surface lightly, then roll or pat dough to 1.5 cm thick. Scrape onions onto dough and spread evenly. Lightly press into surface with hands. Cut and put on sheet an inch apart. Bake for 15 minutes until the onions are coloured and the bottoms are a deep golden colour. Serve hot.
Introduction
These are great served with minestrone or any other type of soup.

- ½ teaspoon salt

- ¼ cup cold unsalted butter
- ½ cup finely grated Parmesan cheese
- ¾ cup milk
