Preheat oven 180 degrees Celsius. Sift the dry ingredients into a large bowl. Add the cheese, zucchini, parsley, scallions and dill then mix lightly. In another bowl beat the eggs together with the buttermilk and melted butter. Add the wet mix to the flour-zucchini mix and stir just to blend. Spoon into a buttered muffin tin and bake for 30-35 minutes.
Introduction
These are great in summer warm and spread with butter with a light and warm soup or a chilled soup. Makes 12

- 3 cups flour
- 3 teaspoons baking powder
- ½ teaspoon baking soda
- 1½ teaspoons salt
- 1 cup grated cheese
- 1 cup grated zucchini
- 3 tablespoons chopped fresh parsley
- 2 eggs
- 3 tablespoons chopped scallions
- 1 tablespoon chopped fresh dill
- 1 cup buttermilk
- ¼ cup melted butter
