Gorgonzola Chicken With Walnuts

Combine the flour,salt and pepper. Dredge the chicken in the flour mixture and shake off excess. In a large skillet over medium heat, melt the butter with the oil. Add the chicken and cook until golden brown on both sides. Remove to an oven proof platter or baking sheet. Add the shallots to the skillet and cook for 1 minute. Stir in the wine and cook, scraping the bottom of the pan, until slightly thickened. Reduce the heat to low and return the chicken to the skillet and turn in the sauce. Return the chicken to the oven proof dish and add cheese and walnuts to the top of each piece. Just before serving warm in a 350 degree oven or broil just to melt the cheese a bit.

- 1 pinch of salt
- 1 pinch of pepper
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- ¼ cup finely chopped shallots
- ½ cup dry white wine
- 4 ounces gorgonzola cheese
- 2 tablespoons toasted walnut pieces
