Can you use self-raising flour for Nigella's American Pancakes and do you need to change the amount or baking powder?
Our answer
Nigella's American Breakfast Pancakes (from Domestic Goddess and on the Nigella website) are made with a combination of plain (all-purpose) flour and baking powder but it is possible to use self-raising flour instead. If you use self-raising flour then you should leave the baking powder out of the recipe completely, otherwise the pancake mixture will be very bubbly and the pancakes will also have a slightly chemical taste.
If you are using American self-rising flour then you should also omit the salt as American self-rising flour usually contains added salt.
It is also worth checking the "best before" date on the package of self-raising flour as if it has passed this date the raising agents may not be as active and the pancakes will not be as fluffy.
