Full question
Nigella's Date and Marmalade Cake uses 500g of dates. Is this 500g of whole dates or is the weight calculated after the stones are removed?
Our answer
Nigella's Date And Marmalade Christamas Cake (https://www.nigella.com/recipes/date-and-marmalade-christmas-cake) (from SIMPLY NIGELLA) is a rich gluten-free cake that is sticky and moist. It is a good last-minute substitute for a rich fruit cake and is good at any time of the year.
The metric weight of dates in the ingredients list (500g) is the weight of the dates including the stones or pits. These are removed in step 2 of the recipe. If the pits/cores/seeds/skin/peel of a fruit is removed during the recipe method then usually it is assumed that the weight in the ingredients list is the weight before preparation - i.e. before the item is pitted/cored/deseeded/peeled. If it is a prepared weight then usually this is indicated in the ingredients list.
