Our answer

Nigella's Cauliflower And Cashew Nut Curry (from SIMPLY NIGELLA) is a very flexible vegan dish. The flexibility comes from being able to use an Indian curry paste instead of a Thai one, if you prefer, and also the curry sauce would go well with most cooked vegetables.

The cauliflower curry leftovers will keep in the fridge for up to 3 days. Cool and chill the leftovers as quickly as possible (and within 2 hours of making) and reheat gently in a saucepan or in a microwave until piping hot all of the way through. We don't particulary recommend freezing the curry, as sometimes sauces with coconut milk can turn slightly grainy when they thaw. However, this is more of an aesthetic issue and if you don't mind this and don't want to waste the leftovers then cool and chill the leftovers as above and then freeze in an airtight container for up to 3 months. Thaw overnight in the fridge and reheat as above.
