Our answer

Nigella's Chocolate Fudge Cake (from NIGELLA BITES) is a moist chocolate sponge that is sandwiched with a fudgy chocolate frosting. It is possible to freeze the cake and frosting, but we would suggest doing this separately.

Once the sponges have baked and are completely cold, wrap them individually in a double layer of food wrap and a layer of foil. Freeze for up to 3 months. To thaw, unwrap, put the layers on a wire rack and leave at room temperature for 2-3 hours. The frosting can be frozen in an airtight container for up to 3 months. Thaw overnight in the fridge then leave to stand at room temperature for 1-2 hours until it is spreadable. You may need to beat the frosting briefly again before using to make sure that it has a smooth, even consistency. You may also be able to thaw the frosting at room temperature, but the time it takes to defrost can vary according to room temperture and the container used. Assemble the cake and store in an airtight container. The cake at its best on the day that it is thawed and frosted and will keep for 3-4 days in the airtight container.
