Nigella's Creme Caramel For One (from COOK, EAT, REPEAT) is a solo treat of a tender, melt-in-the-mouth baked custard that is enrobed in a bittersweet caramel. The creme caramel itself should only be baked in a low oven. Using a microwave would cook the custard too quickly and firmly.
Nigella uses a microwave to warm the milk before it is added to the eggs and sugar. Using warm milk rather than cold helps the custard to cook evenly. The microwave is a convenient way to warm a small amount of milk but it is not completely necessary and it is possible to warm the milk in a small saucepan. Put the saucepan over a low heat and warm until tiny bubbles just start to form around the edges of the pan. Pour the warmed milk in a thin stream on to the egg yolk mixture and continue with the recipe.
