Full question
Can I make the Scented Citrus Cake dairy-free? I wonder whether it would taste as good with vegan margarine/butter?
Our answer
Nigella's Scented Citrus Cake (from AT MY TABLE) is a gluten-free cake that is flavoured with orange and lemon and topped with a citrussy glacé icing.
You can make the cake using a plant-based margarine rather than butter and there are now some very good products available. However, we would aim to use a plant-based margarine that is in a block (or sticks) as they are usually better for baking. They may also be marked as "for baking". The spreadable types that come in tubs or containers can be a little too soft and can occasionally lead to a cake with a slightly greasy crumb. Try also to use an unsalted version if you can. If you are worried about the lack of flavour then use the finely grated zest of 2 large lemons and 1 large orange, just to boost the citrus element slightly more.
