Full question
Can I multiply the Mine-All-Mine Sweet And Salty Chocolate Cookies recipe to make more? Say a couple of dozen?
Our answer
Nigella's Mine-All-Mine Sweet And Salty Chocolate Cookies (from COOK, EAT, REPEAT) makes two generously-sized cookies. The inspiration for a scaled-down cookie recipe came from lockdown, when ideas were needed for those who were living alone or in small households.
As the cookies are at their best when warm, we do recommend trying to make them in smaller numbers. However, the recipe is easily scaled up, particularly as there are no eggs so you do not need to worry about a fraction of an egg. Just remember that the recipe makes two and multiply out the ingredients to make the number of cookies you need. For 12 cookies you would need to multiply everything by 6 and for 24 cookies multiply everything by 12. If making larger numbers of cookies it may also be easier to use a mixer, buy try not to over work the dough as it will change the texture of the cookies, mix just until you have a sticky dough that clumps together. The cookies spread when they bake, so you will need to bake them in batches as you can only fit 2-3 cookies onto a large baking sheet. For tips on how to make the cookie dough in advance, please see the "Additional Information" box at the bottom of the recipe.
