Can I substitute the butter in the Bar Nuts recipe with olive oil (as in Nigella’s Seasonally Spiced Nuts) to make it suitable for vegan guests?

Our answer

Nigella's Bar Nuts (from NIGELLA BITES) are mixed nuts that are served warm and are coated with an aromatic and slightly sweetened butter. They are ideal for serving with pre-lunch or pre-dinner cocktails.

We do not see any reason why you could not use olive oil instead of butter. Because of the spices there isn't any need to use a high quality extra-virgin olive oil, but if your olive oil has a very grassy taste then you may want to hold back a little of the rosemary and taste the nuts before adding any more, as rosemary and a very grassy olive oil can sometimes taste a little resinous together.
