Nigella's Sesame Peanut Noodles (from NIGELLA EXPRESS) is a fresh and lively combination of cooked egg noodles with crunchy vegetables and a satay-style dressing. For speed, Nigella uses egg noodles that can be bought from the supermarket already cooked and ready to use. Dried noodles can be used as an alternative and you should cook any dried noodles until just tender then drain, rinse well with cold water and drain again.

If you would prefer to use an egg-free noodle then that would be possible, though we would aim for longer, thinner noodles. These are often called wheat noodles, or the flat Thai rice nooldes or vermicelli may be an option. However, our preference would be to use soba noodles, as these are not usually made with eggs and are very good in cold noodle salads.
