Hello, I’ve recently been given some white miso and I’d loved to try out the Spatchcock Chicken with Miso and Sesame Seeds. Would this marinade work with chicken thigh portions?

Nigella's Spatchcock Chicken With Miso And Sesame Seeds (from AT MY TABLE) marinates a spatchcock chicken (that has had the backbone removed) in an umami-laden mixture that includes miso and soy sauce. The chicken is then roasted and sprinkled with sesame seeds.
It would be possible to use chicken thighs instead of a whole chicken. We would prefer to use thighs that are skin on and bone in as skinless, boneless thigh fillets will dry out more quickly if they are roasted. You would need 8-12 thighs, depending on size (about 2 kg total weight) for 6 people. Marinate the thighs as you would for the whole chicken. The thighs will probably not need quite as long in the oven as a whole spatchcock chicken, though this will depend on the size of the thighs. We would suggest roasting the thighs for 30 minutes then basting them, sprinkling over the sesame seeds and roasting for a further 20 minutes. Check the chicken is completely cooked through before serving.
