Our answer

Nigella's Salmon Fishcakes (from NIGELLA BITES) are made with a base of mashed potatoes and canned salmon and then coated with matzo meal, giving a crisp coat and a soft interior. Matzo meal is made from matzo crackers, which are unleavened crackers made with wheat flour and water. It is possible to buy gluten-free matzo meal on-line and leftover matzo meal can be used in many dishes as an alternative to dried breadrcumbs.

Alternatively we would suggest using instant polenta. Instant polenta is the quick-cooking type (usually 5 minutes) and is made either from polenta that has been cooked, dried and then ground up again or from extremely finely ground cornmeal. This type of polenta can usually be found in most supermarkets and grocery stores and should not be confused with the ready to eat type of polenta sold in blocks. Use the same amount (weight or volume) of instant polenta instead of matzo meal.
