Any tips for a gluten-free flour substitution for the Courgette Fritters would be greatly appreciated.
Our answer
Nigella's Courgette Fritters (from NIGELLA SUMMER) are shallow fried pancake-like fritters made with grated courgettes (zucchini) and feta cheese. Usually this type of fritter can be made with a gluten-free flour and we suggest that you use your favourite gluten-free plain flour or all-purpose flour/baking mix.
You may need to adjust the amount of flour used slightly if it is gluten-free, as this flour will absorb liquids differently. We suggest starting with 100g (approximately ¾ cup) of the flour and then adding more as necessary, until you have a batter with a soft dropping consistency. Fritters made with gluten-free flours will be much more fragile and difficult to turn over without breaking, so turn them carefully and with a large spatula or fish slice. Please note that as we have not made the fritters in this form, we are unable to guarantee the results.
