I would like to make the Forgotten Pudding but can't find cream of tartar. What can I use as a substitute please?

Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a meringue mixture that cooks overnight in an oven that is heated and then left to cool, hence the "forgotten" name. This gives a soft, almost marshmallowy, base that is then topped with whipped cream and summer fruits.

Cream of tartar is added to the meringue mixture as it is an acid and helps to stabilise the whisked egg whites. It is easily available in the UK and US but more difficult to find in other countries. However lemon juice or white wine vinegar can be used as substitutes for cream of tartar in baking. Use the same amount of lemon juice or vinegar as cream of tartar, so for this recipe use 1/2 teaspoon, and add at the same stage in the recipe as the cream of tartar.
