Devilled Pork Chops
Asked by maxie. Answered on 9th August 2012
Full question
I can't find Nigella's recipe for devilled pork chops in my copies of Nigella Express or How to Eat and I know I have used it many times! Please help if you can guide me to this one of the recipes in Nigella's cookbooks. Thanks, Cynthia Palank
Our answer
Devilled foods are usually ones that are prepared with hot spices, such as cayenne pepper or mustard. This makes us suspect that the devilled pork chops you are referring to are Nigella's Mustard Pork Chops which appear on p11 of Nigella Express. There is also a link to the recipe below. The chops are beaten slightly to make them thinner and speed up cooking, they are then pan fried and served with a sauce made from cider, wholegrain mustard and cream.
The recipe suggests serving the chops with some gnocci, cooked in the traditional manner. We would also suggest serveng them with gnocci prepared as Rapid Roastini - from Kitchen p69.
