Nigella's Red Leicester Cauliflower Cheese coats blanched cauliflower florets in a rich cheese sauce made with Red Leicester cheese. If you can't find Red Leicester then you can use a good cheddar cheese instead.
The cheese sauce is spiked with English mustard as this adds a piquant note that helps to cut through the richness of the cheese, so that the sauce is not too cloying. The recipe uses regular English mustard that comes from a jar or tube. This can be stirred into the melted butter, before the flour is added to make a roux. In Nigella's recipes ready-made mustard is the default and if mustard powder is used then it is stated as mustard powder. If you can't find English mustard then you could use Dijon mustard instead. It is milder than English mustard, so taste the sauce once the cheese has been added and add a touch extra if you think that the sauce needs it.
