Full question
In the Soft White Dinner Rolls recipe the ingredients state 4 cups/600g flour but instructions read to put 3½ cups/500g in a bowl. Is this an error or is the ½ cup used up on the “floured board"?
Our answer
Nigella's Soft White Dinner Rolls (from FEAST) are home-made bread rolls that are fun for both children and adults to make. The recipe uses 500g/3½ cups of plain (all-purpose) flour as a starting point and warm milk and butter are added to the flour and yeast.
However, all flours vary in terms of how much liquid they absorb and if the dough is too wet then enough of the remaining 100g/½ cup of flour should be added to make a soft but not sticky dough. This is mentioned in step 3 of the method. It is unlikely that you will need all of the remaining 100g/½ cup of flour and you may not need any extra at all, but until you mix the dough it is difficult to know. Certainly, any left over can be used to dust the work surface for kneading, but this should be kept to a minimum as too much flour will make the rolls slightly heavy.
