Freezing Cheesecake

Hi! I have just made the chocolate and lime cheesecake from Nigella Bites, and as lovely as it is we do not think we will get through it all – can it be frozen in the same way as the Peanut Butter Cheesecake from Kitchen (also a big success!)? Thanks
Our answer
Baked cheesecakes made with full fat (not light) cream cheese usually freeze very well and the Chocolate Lime Cheesecake will freeze. If you are freezing the whole cheesecake then cool and chill it in the tin (pan), wrap it tightly in a double layer of clingfilm and a layer of foil and freeze it for up to 1 month. Thaw the cheesecake overnight in the fridge and eat within 2 days.
If you are freezing leftovers then you may prefer to freeze individual slices of the cheescake. Slice the cheescake up and set the slices on a baking sheet lined with baking parchment (parchment paper). Put the baking sheet in the freezer and freeze the cheesecake until the slices are solid (this is likely to take about 6 hours). When the slices are solid wrap each one individually in a double layer of clingfilm then store them in an airtight box. Again the slices will keep for up to 1 month, should be thawed in the fridge overnight and eaten within 2 days.
