Freezing Scones

I've baked 160 of Nigella's scones for a tea in 2 days time. Tonight I wrapped the frozen scones in foil in packages of 10, then put each package into a freezer bag. We will reheat them before serving. My concern is - will they develop moisture in the plastic bag? Would they get soggy? Awful thought!
Our answer
Nigella's Buttermilk Scones (from Kitchen), like most scones, are best on the day they are made but can be stored for 1-2 days in an airtight container or frozen for up to 1 month. If the scones are wrapped in foil and in bags then there is a risk that they will become soggy if they are thawed in these wrappings, as there will be some frozen condensation in the bags.
We would suggest that when you defrost the scones you unwrap them and put them on wire racks at room temperature for about an hour. When the scones are warmed before serving you can wrap them again in the foil or you may find it better to unwrap the scones. This will ensure that any moisure on the surface of the scones will evaporate and give the crust a chance to crisp up. The thawed scones should be warmed in an oven preheated to 150c/300F for 5 to 10 minutes.
