How Can I Make The Apricot Almond Cake For a Big Birthday Party?

Full question

I would love to make the Apricot and Almond Cake for my father-in-law's birthday, which is on Christmas Day. There will be a lot of people there so a 20cm cake will not be enough. Would it work if I made two as a double layer cake? What would you recommend as a cream or icing to bind them together?

Nigella's Apricot And Almond Cake With Rosewater And Cardamom (from SIMPLY NIGELLA) is a gluten free cake so will tend to be slightly fragile and unfortunately we do not think that this cake will work particularly well as a two layer cake as it is a little difficult to lift the top layer onto the bottom one. There is also a risk that the base cannot hold the weight of the top layer. Instead you could make two cakes and serve side-by-side or even use a fancy cake stand that has layers.

The cake is wonderful as a dessert cake and whipped cream is a good topping for the cake. A buttercream will probably be a little too sweet and dense. You can then decorate the whipped cream with chopped pistachios and perhaps some dried rose petals. Leftovers should be refrigerated. You may also like to consider Nigella's Apple And Almond Cake which could also be topped with whipped cream and toasted, flaked almonds.
