How Long Do I Cook A Bigger Roast Duck For?

For the Roast Duck with Orange, Soy and Ginger, I have a 3.2kg duck. How much time is needed to poach and then roast? Thank you!

Nigella's Roast Duck With Orange, Soy And Ginger (from AT MY TABLE) has a method that involves steaming then roasting the duck, yielding tender meat and crisp "quackling" skin. Nigella uses two ducks, each approximately 2kg in weight.

If you have one larger duck then we suggest that you add an extra 30 minutes to the initial steam cooking time for every kilo over 2kg. So if the duck is 3kg steam cook for 2 hours and make sure the duck is completely cooked through before removing it from the oven. For the second cooking add an extra 10 minutes for each extra kilogram. So for a 3kg duck roast it for 60-70 minutes. Make sure the duck is piping hot to the centre before removing it from the oven. But please note that as we have not tested the recipe with this size of duck, we are unable to guarantee the results.
