Apart from halving the quantities are there any other modifications needed if making Ed's Mother's Meatloaf for two people, e.g. cooking time, leaving out the eggs etc?

Ed's Mother's Meatloaf (from KITCHEN) is a moist and savoury meatloaf that is full of flavour. The original recipe served 8-10, so if you make half quantities then it should serve 2 people with leftovers for sandwiches. The amount of meat mixture is quite generous, so you should find that there is enough to cover 2 eggs, the meatloaf will just be a little shorter than the one shown in the photograph. Please just note that the boiled eggs do not freeze well, so we would not advise freezing leftovers. But the leftover meatloaf will keep in the fridge for 2-3 days.
You may need slightly more than half of the bacon quantity as you need enough bacon to wrap the top and ends of the meatloaf. It is better to have slightly too much than to not have enough and have some bare patches. Leftover bacon can always be used for other dishes. When cooking the meatloaf, use the same oven temperature as specified in the recipe. It is likely to take about 45 minutes to cook, but start checking the meatloaf after 40 minutes. The juices should run clear when you insert a skewer or thin-bladed knife into almost the centre of the meatloaf.
