Our answer

Nigella's Korean Keema is a one-wok dish made with minced (ground) turkey. It is both speedy and delicious, a combination of sweet, spicy and salty. Fortunately as it is made with ground meat it is very versatile and can be made with minced chicken, pork, lamb or beef, as well as turkey.

However you don't want the minced meat to be too lean, otherwise it could become a little dry as it is cooked. Minced pork is not usually super-lean so would be a good ingredient to use in the Keema. If you use chicken then use minced thighs or a combination of thigh and breast. If using beef avoid very lean minced beef or use a combination of beef and pork. If you have a choice when buying the minced meat, look for 10-15% fat content on the packaging.
