Hi, I would like to make a larger version of the Chocolate Key Lime Pie for a dinner party. If I used a 12inch tart tin, should I double the ingredients? Thanks.

Our answer

Nigella's Chocolate Key Lime Pie (from KITCHEN) is inspired by the old-fashioned chocolate lime sweets (candies). The digestive biscuit (graham cracker) crust is flavoured with cocoa and chocolate chips and filled with a sweet-sharp lime cream.

Fortunately as the pie is not baked it can be scaled up fairly easily. The original recipe filled a deep loose-bottomed fluted tart tin that is 23cm (9 inches) in diameter. If you want to use a 30cm (12-inch) tart tin then you will need to increase the quantity by 30-50%. If the tart tin is 3cm (1¼ inches) or less deep then use 30% extra (or 1.3x the original amount of ingredients). If the tin is deeper than this then you will need 50% extra (or 1.5 x the original amount of ingredients). Because of the extra amount, we would suggest refrigerating the assembled pie overnight, to make sure that it chills completely.
