Malibu is an ingredient in the Caramelized Pineapple with Chocolate Sauce. I'm from the U.S. and not familiar with it, could you let me know what it is? Thank you.
Our answer
Malibu is a white rum that has been flavoured with coconut. It is quite a popular liquor that is often mixed with pineapple juice to make a pina colada type cocktail. It is owned and distributed by the Pernod Ricard group. Nigella uses Malibu in the chocolate sauce from Caramelized Pineapple With Hot Chocolate Sauce (from Forever Summer) to add a Caribbean slant to the sauce.
Malibu is available in many liquor stores in the US and we suggest that you ask for it at your local store. You should look for Malibu Original (there are some flavor variations). The regular bottle size is 70cl but you can get half-sized bottles as well. If you really can't find Malibu then you could use a regular rum plus some coconut extract. However Malibu has an ABV of around 20%, so you should try to avoid using a rum with a very high alcoholic content and if you want to serve the dessert to children then replace the rum with milk and coconut extract.

I used 1 tbsp Bacardi (white rum) and 1 tbsp of coconut essence instead of 2 tbsp of Malibu in the tropical chocolate cake in Feast, and it tasted delicious :)
