Full question
Hi, for Nigella's Breakfast Bars in Nigella Express is there a no nut substitute for the peanuts please? Thank you.
Our answer
Nigella's Breakfast Bars (from NIGELLA EXPRESS) are oat bars studded with cranberries, coconut, mixed seeds and unsalted peanuts and bound together with condensed milk. They are almost like breakfast cereal in a bar form and are just as good as a mid-morning or mid-afternoon snack. The bars contain coconut, which in most cases is fine for people with nut allergies but if in doubt please check before using it.
The cranberries, nuts and seeds can be changed and for a nut-free substitute you may find it easiest to just increase the amount of mixed nuts and seeds used from 125g (1 cup) to 250g (2 cups). Larger seeds, such as pumpkin seeds, would be particularly good as they provide some contrasting texture to the oats and smaller seeds. Otherwise you could just omit the peanuts from the recipe.
