Rose Water And Cider Vinegar

Do you have any suggestions for the cider/white wine vinegar and rose water brands? The brand that I use seems to have a strong taste. Thank you.

Our answer

Nigella uses white wine vinegar and cider vinegar in several recipes and to an extent the two can be interchangeable as they are both acidic but without a strong flavour. We don't recommend any particular brand and tend to buy whatever is available at the time in our local store or supermarket. If the recipe suggests using raw, unfiltered apple cider vinegar then this has a slightly fuller flavour than the filtered type. If unfiltered apple cider vinegar is not available, or not to your taste, then it can be substituted with regular cider vinegar.

If you are lucky enough to have a good Middle Eastern grocery store near you then we would suggest looking in there for rosewater as they usually have authentic brands. But otherwise we suggest buying on-line or in your local supermarket. The flavour of rosewater tends to fade gradually after it has been opened, so if it is a new bottle you may like to use less than stipulated in the recipe and add a little at a time until you get to a level that suits your own taste.
