Round Tins For Buttermilk Birthday Cake

Full question

I want to make a 2 layer Buttermilk Birthday cake using sandwich tins. Please could you tell me which size I need to use for this recipe and how to adapt the temperature and/or time for a fan oven? Many thanks!

Nigella's Buttermilk Birthday Cake (from HOW TO BE A DOMESTIC GODDESS) is a popular cake that can be adapted for round, square or shaped tins. It can make one 23cm/9-inch square cake. If using round sandwich tins (cake pans) then we would suggest using 20cm/8-inch diameter pans.

The baking temperature is 180°C/350°F and for a fan oven you usually need to reduce the temperature by 20°C, so you would need a fan oven setting of 160°C. However as ovens do vary it is worth checking the manual that comes with your oven for extra information. For two layers the baking time should be 25-30 minutes and we would suggest you start checking at 25 minutes as fan ovens can cook more quickly, even with a temperature reduction. The cake layers should be risen and firm to the touch and if you insert a cake tester into the centres it should come out clean.
