Full question
I can't quite understand the part where in the 'introduction' of the Banoffee Cheesecake Nigella says not to put the toffee sauce in the fridge but just in a cool place, but in the 'make ahead note' at the end it indicates that the sauce "can be made 2-3 days ahead" and kept in a fridge for "up to one month". Is it possible to have clarification?
Our answer
Nigella's Banoffee Cheesecake (from KITCHEN) is a banana flavoured cheesecake served with a toffee sauce. The sauce can be made ahead. The make ahead note does say that the sauce can be made 2-3 days ahead and left in an airtight container in a cool place, as Nigella states in the introduction to the recipe.
The comment on refrigeration is there for two reasons. First, to give guidance to those who live in warm environments and may not have a suitable cool place to store the sauce. Second, if there are leftovers of the sauce, or if you want to make it further ahead, then the sauce can be stored in the fridge for up to one month. Try to take the sauce out of the fridge and let it come to room temperature before using it.
