Should the Slow Roast Pork Belly cooking time be adjusted according to the weight of the pork or left with the times in the recipe? I'd like to try with a smaller cut, about 1 kilogram. Thanks.

Nigella's Slow Roast Pork Belly (from KITCHEN) marinates the meaty part of a pork belly in soy sauce, tahini and citrus juices and then slow roasts the belly so that most of the fat renders away, leaving tender meat and crisp crackling.

The cut specified in the recipe is 1¾ kilograms (about 3¾ pounds). If you have a smaller cut then you can reduce the cooking time slightly, but the beauty of a pork belly is that it does not dry out easily and the cooking time has some leeway. If the belly is slightly smaller then the cooking time will be the same. For a 1 kilogram piece you could reduce the initial low remperature cooking time to 3 hours, but leave the high heat cooking time the same, at 30 minutes, as this ensures that the skin crisps up sufficiently.
