Full question
Can I use white wine instead of sherry for the Linguine With Mussels?
Our answer
Nigella's Linguine With Mussels (from NIGELLA SUMMER) cooks mussels in a spicy, garlicky sauce made with amontillado sherry. Amontillado sherry is a dry, medium sherry that has an oaky, nutty flavour. It gives the dish a slightly Spanish tilt.
A dry Marsala is usually the closest substitute for amontillado sherry as it is aged in a similar way. It also keeps well after opening so is useful to have as a kitchen staple, to splash into sauces and stews. However for this particular dish it would be possible to use a dry white wine as an alternative, as this goes well with shellfish and is usually paired with mussels for Moules Marineres.
