There’s been so many CookbookCorner-worthy titles out recently, it’s been impossible to include them all at time of publication. Bold Beans (subtitled “recipes to get your pulse racing”) came out at the beginning of July and I just didn’t want another week to go past without telling you about it! It is part of a UN initiative called “Beans is How”, a campaign to double the global consumption of beans by 2028, and I can’t think of a better inducement than the recipes in this book. There are many reasons to eat more pulses: they’re good for the soil, good for the environment, and good for the gut, as well as being a most economical source of protein. (If you have a child going off to Uni this autumn, I’d pack them off with a copy of this book!). Plus, of course, they’re tremendously versatile and wholly delicious — as the many recipes from a number of contributors in this gorgeous book demonstrate. After dithering deliciously as to which actual recipe to share with you today, I went wholeheartedly for Ali Slagle’s French Onion White Bean Bake!
