Metric Cups
  • 125 grams mozzarella
  • 4 tomatoes
  • 4 tablespoons extra virgin olive oil
  • fresh basil
  • 15 grams fresh basil
  • 1 ciabatta
  • 4⅖ ounces mozzarella
  • 4 tomatoes
  • 4 tablespoons extra virgin olive oil
  • fresh basil
  • ½ ounce fresh basil
  • 1 ciabatta

Method

  • Put the mozzarella cheese for 10 minutes in the freezer. Clean up the tomatoes and cut them in really thin slices. Divide the tomatoes over the plates or just on one big plate and lay them down like overlapping roofing tiles.
  • Powder the tomatoes with salt and pepper and sprinkle half of the oil over it.
  • Cut the basil and grate the mozzarella. Divide the mozzarella over the tomatoes. Scatter the basil over tomatoes and mozzarella and sprinkle the rest of the oil over the tomato salad.
  • Nice to serve with some ciabatta or pasta or with a dream of portobello mushrooms in a bed of garlic, rucola and spaghetti or...
