Kids Afternoon Snack Muffins

Introduction

This is from the wonderful Australian Women's Weekly magazine. When I made these I didn't add the cinnamon (we're not big fans of it in our house); I used strawberry yogurt, and for the fruit I added about 3/4 cup of soaked sultanas. I topped the muffins with demerara sugar. Yum!

Ingredients

Serves: 9

  • 2 cups self-rising flour
  • ½ teaspoon cinnamon
  • 1 pinch of salt
  • ½ cup brown sugar
  • 7 ounces fruit yoghurt
  • 1 medium lightly beaten egg
  • ½ cup olive oil
  • 1½ cups chopped mixed fruit
  • cinnamon sugar (optional)

  • Preheat oven to 180°C or 160°C fan forced. Grease a 12-hole (1/3 cup capacity) standard muffin tin.
  • Sift flour, cinnamon, sugar and a pinch of salt into a large bowl. Make a well in the centre.
  • Add yoghurt, egg and oil. Stir until mixture has nearly come together.
  • Add fruit and stir a couple of more times. Mixture should be quite lumpy.
  • Divide among 9 of the holes.
  • Sprinkle with cinnamon sugar if desired.
  • Bake for 25 minutes or until golden brown and cooked through.
