Soft Molasses Cookies

Prheat the oven to 350F. Cream together the butter and sugar until light and fluffy. Mix in the molasses and then the baking soda, salt, and spices. Add the eggs and beat well. Stir in the flour. Shape the dough into 1 1/2 inch balls - I use a small cookie scoop - and roll in granulated sugar. Place on a greased or parchment lined cookie tin with about 2 inches of space between them. Bake them for 10-12 minutes. They'll look soft and puffy. Cool on the pans for a few minutes and then transfer to a wire rack.

- 8 ounces unsalted butter
- 7 ounces sugar (plus more for coating the dough later)
- 6 ounces molasses
- 2¼ teaspoons baking soda
- 1 teaspoon salt
- 1¼ teaspoons cinnamon
- 1¼ teaspoons cloves
- 1 teaspoon ground ginger
- 2 large eggs
- 14¾ ounces all-purpose flour
