Soft Molasses Cookies

Introduction

I love these cookies especially in the fall and winter.

Ingredients

Serves: 30

  • 8 ounces unsalted butter
  • 7 ounces sugar (plus more for coating the dough later)
  • 6 ounces molasses
  • 2¼ teaspoons baking soda
  • 1 teaspoon salt
  • 1¼ teaspoons cinnamon
  • 1¼ teaspoons cloves
  • 1 teaspoon ground ginger
  • 2 large eggs
  • 14¾ ounces all-purpose flour

Method

  • Prheat the oven to 350F.
  • Cream together the butter and sugar until light and fluffy.
  • Mix in the molasses and then the baking soda, salt, and spices. Add the eggs and beat well. Stir in the flour.
  • Shape the dough into 1 1/2 inch balls - I use a small cookie scoop - and roll in granulated sugar.
  • Place on a greased or parchment lined cookie tin with about 2 inches of space between them.
  • Bake them for 10-12 minutes. They'll look soft and puffy. Cool on the pans for a few minutes and then transfer to a wire rack.

    I have made these with black treacle, too, and they were delicious.
