Easy Asian Noodle Salad

This salad can be a main meal for four or added to an Asian banquet You can prepare in advance and add the dressing at the last moment to keep the colour and crunch Serve at room temperature Mix all liquid ingredients in a small non metallic bowl and put the dressing aside Boil rice noodles as per instruction, drain and rinse with cold water (Spray with a little oil and mix to stop them from sticking) Peel carrots and shred all the vegetables (I use a mandolin but a grater would work well) Mix veggies, noodles and dressing in a large bowl, top with chopped coriander and peanuts

- 1 packet pho bhan (dried rice noodles)
- 2 carrots
- 1 cucumber
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 1 bunch cilantro
- ½ cup peanuts (or roasted cashews)
- ½ cup sweet chile sauce
- ½ cup rice wine vinegar (or white vinegar)
- ¼ cup thai fish sauce (nam pla)
- ¼ cup warm water
