Eggs in Coconut Milk

Egg curry with a difference.

Ingredients

Serves: 4 persons

  • 5 medium eggs (hardly boiled)
  • 1 cup grated coconut
  • 1 teaspoon red chile powder
  • ½ teaspoon ground cumin
  • ½ teaspoon turmeric
  • ½ teaspoon ground coriander
  • 3 tablespoons vegetable oil
  • 1 pinch of salt (to taste)
  • 2 sliced onions

Method

  • Grate coconut. Extract coconut milk by puting hot water in grated cocunut. Put oil in pan. On medium heat, add sliced onion. Brown it.
  • Add salt, red chile powder, cumin powder, coriander powder and turmeric powder. Add 1/2 cup water. Saute well.
  • Add boiled eggs (whole). Simmer in gravy. Add cocunut milk. Simmer till milk thickens. Sprinkle coriander leaves and serve immediately.
