Heat oven to 180c/fan 160c/gas4, mix the butter, sugar, and pepper together, then toss through the pecan nuts, line a tray with baking parchment, then spread over the nuts in a single layer, cook in the oven for 5 minutes, then give then a good stir then cook for another 5 minutes, or until they are crisp.

these are a bit like nigella's ''union square cafe bar nuts'' but are a bit more simple, these are great when ever, i don't know how long you can store them for, because they are all eaten with in 10 miniutes of them being made! give them a try....

- ½ teaspoon cayenne pepper
- 300 grams pecan nuts
- 1¾ ounces butter (softened)
- ⅞ ounce brown sugar
