Halloumi Parcels

Introduction

Nigella has included halloumi in her TV series and her books. It is a rich creamy cheese which is ideal for both grilling and frying and is readily available now in supermarkets. Although have travelled extensively in Turkey and been to Cyprus many times, I came upon this recipe for the first time this summer. It is simple and quick to produce and ideal as a Mezze dish, starter, party or buffet addition. I did eat it without the vegetable ingredient but you need it to cut the blandness of the cheese.

  • pitta breads
  • halloumi
  • red peppers
  • pita breads
  • halloumi
  • red bell peppers

Method

  • Cut the cheese into slices about an eighth of an inch thick and cut the pepper into similar size pieces.
  • Grill both the cheese and the pepper either under the grill or on a griddle. The pepper will need longer.
  • Meanwhile, warm or toast the pita and then cut into quarters.
  • Place a slice of cheese and a slice of pepper inside the pita so it forms a little envelope parcel. Serve.
  • You could use tinned or bottled grilled peppers or grill/fry sliced tomatoes instead!
