In a saucepan, combine nuts, sugar and water and bring to a boil. Reduce heat to medium-low and simmer for 25-35 minutes until the majority of the liquid is evaporated. Remove from heat and add the vanilla. Strain the chestnut, reserving the sugar syrup and transfer to a food processor and blend until smooth. Add syrup slowly until desired consistency is obtained. Allow to cool before refrigerating.

Way too much water! I made chestnut puree myself without a recipe after foraging for sweet chestnuts - it was perfect. Thought I'd check and see what proportions were suggested. I'd guesstimate that 50 mls and add if necessary rather than 500mls of liquid. I had to add in another batch of chestnuts and then heat for another 20 minutes.
