Irish Potatocup With Marinated Cucumber Slices

Lovely snack,lunch,side dish... Low in calories, high with flavour!

Ingredients

Serves: 6

For the Potato Cup

  • 2 cups shredded potatoes
  • 4 tablespoons grated Parmesan
  • 2 tablespoons minced onions
  • 1 pinch of pepper
  • 1 pinch of nutmeg
  • 1 pinch of salt
  • butter (for greasing)
  • fresh parsley

For the Cucumber Slices

  • 1 cucumber
  • ½ teaspoon minced fresh mint
  • 1 pinch of cayenne pepper
  • ½ teaspoon sugar
  • 2 teaspoons rice wine vinegar

Method

  • Preheat the oven to 350F
  • Mix the potatoes, cheese, onion, nutmeg, salt and pepper.
  • Generously butter muffin tins, size 2½ inch. Press the potato mixture evenly into the tins.
  • In the oven for 45 min. (or until edges are well browned) Remove from oven, cool slightly on a rack, then loosen and invert the cups unto a warm plate.
  • To prepare the Cucumber

  • While the potatoes are baking, notch the edges of the cucumber with the tines of a fork.
  • Using a mandoline(not the musical instrument!;)) slice approximately 7 to 8 slices per serving.
  • Mix the vinegar, mint, cayenne pepper add sugar, marinated the slices for approx. 30 minutes.
  • Overlap the slices in a circle off the side on each plate.
  • Place the mufins on top, add a sprig f parsley and serve!
